Bonefish Saucy Shrimp
Ingredients:
2T Butter
1T Olive oil
1T shrimp seasoned with salt and pepper
6 cloves minced garlic (3t.)
1T tomato paste
¾ cup clam juice or chicken broth
1T sugar
1T lime juice
¾ cup heavy cream
½ cup sundried tomatos
1/3 cup kalamata olives
½ cup crumbled feta
Directions: Heat butter and olive oil, add shrimp seasoned with salt and pepper and sauté until pink.
Add garlic (30 secs)
Add tomato paste and saute for 1 minute.
Add the clam juice, sugar, lime juice, and heavy cream and simmer 2-3 minutes.
Add tomatoes and olives and cook for 2 minutes. Crumble feta over top, serve over rice or pasta
