Creamy Baked Chicken Thigh

Chicken, Mushrooms and Rice (Comfort Food)

This is quintessential comfort food. Chicken breasts or thighs are baked in rice with mushrooms and cream of mushroom soup with a Lipton Onion Soup Mix seasoning. Make it Sunday and makes Perfect leftovers for the week.

Chicken, Mushrooms and Rice Ingredients:

  • 1 can Campbell’s Cream of Mushroom Soup
  • 1 can Milk (or Lactaid)
  • 3/4 cup rice
  • 4 oz. chopped mushrooms (rinse then dry mushrooms before chopping).
  • Lipton Onion Soup Mix Package. (Dry Spice Mixture used for seasoning)
  • Chicken Breasts or Chicken Thighs (4 bone in chicken breasts, 8 bone in chicken thigh).
  • 2 Tablespoons Essence or salt and pepper to taste

Chicken, Mushrooms, and Rice Instructions:

  1. Preheat oven to 350 degrees
  2. Season chicken with salt and pepper (or Essence)
  3. Mix soup and milk.
  4. Add 1/2 of the Lipton Onion Soup Mix to Milk and Soup. (Leave the remaining onion soup mix for final step.
  5. Pour Rice into Casserole Dish. Add milk mixture.
  6. Evenly spread mushrooms around casserole dish.
  7. Place chicken breasts or thighs evenly around casserole dish.
  8. Sprinkle remaining onion soup mix on top of chicken and casserole.
  9. Cover with foil.
  10. Bake for 1 hour.
  11. Remove foil and continue baking for 15 minutes. Let rest. Serve.
