This is quintessential comfort food. Chicken breasts or thighs are baked in rice with mushrooms and cream of mushroom soup with a Lipton Onion Soup Mix seasoning. Make it Sunday and makes Perfect leftovers for the week.
Chicken, Mushrooms and Rice Ingredients:
- 1 can Campbell’s Cream of Mushroom Soup
- 1 can Milk (or Lactaid)
- 3/4 cup rice
- 4 oz. chopped mushrooms (rinse then dry mushrooms before chopping).
- Lipton Onion Soup Mix Package. (Dry Spice Mixture used for seasoning)
- Chicken Breasts or Chicken Thighs (4 bone in chicken breasts, 8 bone in chicken thigh).
- 2 Tablespoons Essence or salt and pepper to taste
Chicken, Mushrooms, and Rice Instructions:
- Preheat oven to 350 degrees
- Season chicken with salt and pepper (or Essence)
- Mix soup and milk.
- Add 1/2 of the Lipton Onion Soup Mix to Milk and Soup. (Leave the remaining onion soup mix for final step.
- Pour Rice into Casserole Dish. Add milk mixture.
- Evenly spread mushrooms around casserole dish.
- Place chicken breasts or thighs evenly around casserole dish.
- Sprinkle remaining onion soup mix on top of chicken and casserole.
- Cover with foil.
- Bake for 1 hour.
- Remove foil and continue baking for 15 minutes. Let rest. Serve.
