Creamy Baked Chicken Thigh

Creamy Baked Chicken Thigh Ingredients List:

1 Package Bone in Chicken Thigh (6-10 thighs)

2 Cans condensed cream of chicken soup (or 1 cream of mushroom soup and 1 cream of chicken soup)

1 lb. sliced mushrooms, stems removed

1 cup sour cream

1 cup chicken stock, chicken broth, or water.

1/2 tsp. salt plus more to salt chicken

1/2 tsp. pepper plus more to pepper chicken

1/2 tsp. onion powder

1/2 tsp. paprika plus more to sprinkle on top.

2 Tbsp. chives

Creamy Baked Chicken Thigh Instructions:

  1. Preheat Oven to 400 degrees.
  2. Salt and Pepper all over Chicken
  3. Lightly spray casserole dish with non-stick cooking spray. Place chicken in casserole dish.
  4. Mix mushrooms, soup, chicken stock, paprika, salt, pepper, onion powder, chives, sour cream. Cover chicken with mixture. Sprinkle additional paprika on top.
  5. Bake chicken for 60 minutes until chicken internal temperature is 165 degrees and lightly browned on top.
  6. Start rice (1 1/2 cups rice, 3 cups chicken stock)
  7. Serve with Rice and side vegetables.
