Italian Spinach
Ingredients:
Red onion
2 tomatos cut into ½ wedges
1 ½ t. garlic (3 cloves)
1T olive oil
10 oz. spinach
1 lemon (zest and squeeze)
Directions:
In a sauté pan, caramelize onions and garlic in olive oil. Add tomatos and saute. Add spinach. Saute 1-2 minutes. Add lemon zest and juice from one lemon. Season with salt and pepper.
