Aidan’s Spicy Pimento Cheese

Ingredients 12 ounces (1 block) Murray’s mild cheddar cheese6 ounces (1/2 block) Monterey Jack6 ounces (1/2 block) white cheddar Two small containers of diced pimento (8 oz. total)1 cup of mayonnaise 1 lemon, juiced 1 diced jalapeno1 teaspoon onion powder1 teaspoon kosher salt1 teaspoon paprika1/2 teaspoon tabasco1/2 teaspoon cayenne1 teaspoon minced garlic1 teaspoon black pepper1 tbs dijon mustard1 tbs parsley Directions: Shred cheeses, fold in remaining ingredients. Chill. Serve with your favorite cracker

Italian Spinach

Italian Spinach Ingredients: Red onion 2 tomatos cut into ½ wedges 1 ½ t. garlic (3 cloves) 1T olive oil 10 oz. spinach 1 lemon (zest and squeeze) Directions: In a sauté pan, caramelize onions and garlic in olive oil. Add tomatos and saute. Add spinach. Saute 1-2 minutes. Add lemon zest and juice from one lemon. Season with salt and pepper.

Easy Pasta with Vodka Sauce Ingredients: ¼ cup olive oil 1 clove garlic 1 shallot 4T Tomato Paste 1T Vodka ½ cup heavy crea 1 t. red chili flake Box of penne pasta 1T butter ¼ cup parm cheese Directions: Saute garlic and shallot in olive oil. Add tomato paste and saute until dark. Add 1T vodka and cook until evaportated. Add heavy cream and chili flake. Easy One Pot Pasta

One Pot Pasta Ingredients: ½ lb Bacon, chopped 2 boneless chicken thigh 1 lb. asparagus, trimmed and chopped 1 red onion diced 2 t. minced garlic (4 cloves) 6 cups chicken broth (1.5 quarts) 1 cup milk or Lactaid 1 lb. fusilli pasta (or penne) 8 oz. goat cheese ½ cup sun dried tomatos, chopped  Salt and Pepper. Directions: In large skillet, heat on medium heat and add bacon. Cook until bacon is crispy, remove bacon. Salt and pepper chicken thigh and add to pan.
